Introduction

Bright and clean flavors. A great summer meal on it's own, or with grilled meats. Bright and clean flavors. A great summer meal on it's own, or with grilled meats.
Number of Servings: 4

Ingredients

    2 C water
    1 C dry quinoa
    1 T olive oil
    1/2 tsp salt
    zest and juice of 1 lemon
    24 grape tomatoes, halved
    1 cucumber, peeled and chopped
    1/2 bunch green onion, chopped
    1 C shredded carrot
    1 bunch flat leaf parsley, chopped

Directions

Bring water to a boil. Add quinoa and reduce heat to low. Cover pot and simmer 15 minutes. Allow quinoa to cool. In a large bowl combine quinoa, tomatoes, cucumber,, green onion, carrots and parsley. Mix together oil, lemon juice and salt and drizzle over salad. Toss to coat salad. Chill until ready to serve.
