Ingredients

10 small boiling potatoes
1 large can of salmon, drained
1 bunch of scallions, sliced thinly
1tsp dried dill (or 1 tbsp fresh)
1 tsp garlic powder
1 tsp onion powder
1 tbsp olive oil
Directions
Boil and smash potatoes. Feel free to use leftovers.
Combine potatoes, salmon, scallions and herbs.
Using a 1/4 cup measure, scoop mixture and shape into even patties, about 1/2 inch thick.
Heat oil in a non-stick skillet over med-high heat. Add patties, leaving space between. Cook about 3-4 minutes per side, until golden brown.
Serving Size: Makes 13 patties
