Ingredients

1 10 oz. pkg fresh spinach
1 cup chopped scallion greens
3 ounces shelled Pecans
Oil and Vinegar Dressing (Red Wine Vinegar best)
3 Tablespoons Dijon Mustard
1 Tablespoon black pepper
3 Hard Boiled eggs
Tips
Not much dressing is necessary.
Directions
Remove hard stem-ends from spinach, wash, & drain. Line plates or bowls with bed of spinach.
Layer sliced hard-boiled eggs on top; sprinkle with scallions; add pecans.
Mix oil, red wine vinegar, and Dijon together well, and drizzle over salad.
