Ingredients

    Beans, black, 4 cup
    Pinto beans, 4 cups
    Canned Tomatoes, 4 cup
    Onions, raw, 1 cup, chopped
    Green Peppers (bell peppers), 1 cup, strips
    *Cumin seed, 1 tbsp
    *Coriander leaf, dried, 1 tbsp
    *Extra Virgin Olive Oil, 1 tbsp
    Chili poweder, 1 tbsp
    Frozen corn, 1 cup

Tips

You can change this up any way you like! Add different veggies (zucchini would be great, or celery, or anything really), or use different beans. If you have any problems with it not being thick enough, add a few tablespoons of flour and it will be thick and hearty in no time!


Directions

Saute onions and bell peppers for 5 minutes, add seasonings, cook for another 3 minutes. Add beans, tomatoes, corn, and sauted veggies to the crockpot. Cook on low for 5-6 hours.
