Ingredients

    4 cps course shredded cabbage
    2 cps shredded carrots
    1 cp snow peas cut in 1/2
    1/2 cp coarse shredded jimaca
    1/4 cp of thin sliced green onions
    1/4 cp slices or chopped almonds

    Dressing:
    1.3 cp Almond butter
    1 tsp curry powder
    1/2 tsp each ginger powder, garlic powder
    1 tsp sea salt
    Juice of 1 1/2 or 2 fresh lemons
    2 tbs olive oil
    up to 1/3 cp of water

Tips

This can be made a non-vegan salad by thinly slicing a chicken breast and simmering on low heat in a pam sprayed skillet till done. Add a little asian spices if desired. Don't forget the calories from it though as it is not in the recipe!


Directions

Chop or roughly shread cabbage, peeled jimaca, carrots. Cut green onions into thin slices, cut snow peas in 1/2, and mix in a bowl.
Make a sauce by wisking togethter peanut butter, spices, lemon juice and add enough water to thin to a thick salad dressing.
Mix dressing into salad real well and chill for at least 1/2 hour!
When serving top with the almond slivers

    Excellent recipe! Made just like recipe said and it turned out good. I did do the chicken breast thing and added an asian spice i've had in the cabinet for a while. The chicken added to the flavor and fit nicely with the salad! A keeper! - 5/28/12
