Fun Veggie and Chicken-Filled "Sailboats" Fun Veggie and Chicken-Filled "Sailboats"

Ingredients

    1/2 pound ground chicken, browned
    2 tbsp grated onion
    1 large carrot
    salt to taste
    1 serving cheez-it or other crackers
    1 egg white
    1/4 cup grated parmesan cheese
    2 tomatoes
    1 zucchini

Tips

I used celery sticks and dried apricots to make "sails" on the boats for my kids.


Directions

Cut Zucchini in half length-wise, then cut each half in half. Scoop out insides, leaving some of the flesh. Cut tomatoes in half and hollow out. Brown chicken. Add onion and carrots. Sautee with chicken until soft. Crush 1 serving of cheez-it or other crackers. Add to meat mixture, then add egg white. Mix well and add parmesan cheese. Spoon into vegetable boats. Bake at 350 in a pam sprayed dish for about 25 minutes.

Serving Size: Makes 8 stuffed zucchini and tomato halves.
