Ingredients

2 tbs olive oil divided
1 package spinach and garlic chicken sausage (4-5 links)
4 cloves garlic minced ( divided)
1/2 tsp fresh rosemary finely chopped
1/2 tsp fresh thyme finely chopped
1/2 tsp fresh sage finely chopped
1 bay leaf
1/2 cup parsley finely chopped (reserve 2 tbs)
1.25 cups beans ( white, navy or cannellini) drained and rinsed
1 can diced tomatoes with juice
1/2 cup finely ground fresh bread crumbs
Directions
Heat 1 tsp oil in large saute pan. Add sausages and cook until browned on all sides. Transfer to plate to cool, then slice into 1 inch chunks.
Add 2 tsp oil to same pan and cook onions until caramelized, add 2 cloves minced garlic about half way through cooking--about 8 minutes.
Stir in all herbs and tomatoes and heat until boiling. Reduce heat and simmer about 5 minutes until sauce reduces (about 5 minutes). Add drained beans and sausage to pan and cook until heated through (about 5 minutes).
In separate pan, heat remaining 1 tbs of oil until smoking. Add breadcrumbs and remaining parsley and cook until lightly browned.
Sprinkle crumbs onto sausage bean combination and serve.
Serving Size: Makes 5 (1-cup) servings
