Ingredients

    2 C chopped carrots (about 2 carrots)
    1.5 C chopped celery (about 2 stalks)
    1 medium onion, chopped
    1 C mushroom pieces
    .5 C chopped bell pepper
    13 oz chicken breast, chopped into small chunks
    .5 C quinoa
    2 C low sodium vegetable broth
    1 T olive oil
    pepper to taste

Tips

You can add any vegetables you want to this soup. It's a wonderful way to clean out the fridge.


Directions

Cube chicken and brown in .5 T olive oil, remove from pan. Saute carrots, celery, onion, mushrooms, and bell pepper in remaining .5 T olive oil until soft (approx. 5 minutes). Add quinoa, broth, and chicken to pan and simmer for 1 hour.

Serving Size: Makes 5 servings (approx. 2 cups/serving)
