Ingredients

    1 kg of frozen calamari heads or tubes mixed if you like
    1 leek or bunch of spring onions chopped in rings.
    3 carrots blanched and chopped
    300g French cooked beans
    300g chopped Dill guerkins
    170g black olives
    1 chopped green pepper
    1 chopped red pepper
    1 Tsp Atcha (spicey pickled vegetables)optional
    2Tsp olive Oil
    1/2 Lemon juice
    Garlic,Aromat and Black pepper
    Chopped parsley or Coriander

Tips

Change your vegetable to suit the season and your taste. Fresh Celery,broccoli,sweetcorn lovely.


Directions

Boil pot of water with a dash of oil.
Hard boil the whole calamari heads and bodies for 5 minutes.
Drain, rinse and clean taking out the plastic like piece out of the body and cut into rings. Chop the head and tenticles so they are loose.
Add all chopped ingredients.
Season.
Pour over Olive oil and lemon juice.
Toss together.
serve with Fresh bread.
