Ingredients
-
1 medium onion
3 - 4 garlic cloves
3 or 4 sausages (preferrably andouille or smoked)
1 can pinto beans (drained)
1 can black beans (drained)
1 can red kidney beans (drained)
1/3 c. ketchup
1/3 c. spicy brown mustard
2 tbsp paprika
2 tbsp chili powder
2 tbsp garlic powder
2 tsp dry mustard powder
1-2 tbsp cumin
3 oz bourbon
Tips
This recipe tastes best if cooked in a smoker for 30 -45 minutes. Add a little water to compensate for the moisture loss, or the beans will be too thick and goopy.
Directions
- In large skillet, sautee chopped onion and garlic over medium heat, then remove.
- Slice sausages, and cook in skillet. Add onion and garlic.
- Add canned beans, ketchup, and bourbon. Stir.
- Add spices. Cover, and heat for about 15 minutes, stirring occasionally
Serving Size: Makes about 8 1- cup servings
