Ingredients

    2 eggplants
    2 zucchini
    12 cherry tomatoes
    1 onion

    1 tsp garlic powder
    4 T olive oil
    4 T soy sauce

good with other vegetables too like mushrooms and peppers


Directions

cut eggplant, onion and zucchini in half lengthwise then slice. Thread vegetables on skewers starting and ending with a cherry tomato. Mix garlic powder, olive oil and soy sauce. brush onto skewers. Bake at 350 for 20 min and then 400 for 15 min
