Introduction

Number of Servings: 10

Ingredients

    quinoa, cups (dry)
    lentils, cups (dry)
    2 cloves garlic
    water, 3 1/2 - 4 cups
    2 red peppers, diced (around 3 1/2 c)
    1 large tomato, diced (around 1 1/4 c)
    1 c corn (can be frozen corn)
    2 c chopped cilantro (loosely pack)
    1/2 c scallions
    1/2 T ground cumin
    1/2 T no salt seasoning
    1/2 c lime juice
    1/4 c olive oil

    ***salt to taste***

Directions

cook quinoa, lentils, and garlic in the water. I use a pressure cooker (7-10 minutes); standard stovetop will be 30-45 minutes. Meanwhile, chop the veggies and combine. Let the quinoa/lentil mixture cool when finished. Combine.

Serving Size: makes 10 cups???
