Introduction

Number of Servings: 6

Ingredients

    3 eggs ( room temp)
    1/4 cup coconut flour
    1/4 cup vegetable oil
    1/4 cup honey
    1/4 tsp sea salt (fine)
    1/4 tsp baking soda
    1 Tbsp orange (or lemon) zest
    1 Tbsp chia seeds

Tips

These also work great as lemon chia seed muffins and some vanilla extract can be added if you prefer (1/4 to 1/2 tsp).


Directions

Preheat the oven to 350 F and line a muffin tin with muffin cups. Mix the together everything except the orange zest and chia seeds until well blended. Add chia seeds and zest at the end. Bake for 20 to 25 minutes for normal size muffins and 15 to 18 for mini muffins.

Serving Size: Makes 6 regular size muffins or 20 mini muffins
