Ingredients

    2 Ears Sweet Corn kernels
    2 Cups Cherry Tomatoes quartered
    2 Haas Avocado Diced
    1/4 - 1/3 Head Napa Cabbage thinly cut

    Vinaigarette

    1/2 cup olive oil
    Juice from 2 limes
    2 Garlic Cloves minced
    2 Tbsp Honey
    2 tsp Kosher Salt
    1 tsp black pepper

Tips

Keeps well for several hours but not overnight as the cabbage does not hold up after dressing.


Directions

Combine veggies in large mixing bowl.

Prepare vinaigrette in lidded mason jar, shake well.

Pour over veggies. Let sit for about 10 minutes for flavors to come together.
