Introduction

My daughter got this from a friend's mom. My daughter got this from a friend's mom.
Number of Servings: 10

Ingredients

    3/4 cup uncooked quinoa
    1 medium onion, chopped
    3 cloves garlic, chopped
    3 tbsp olive oil
    12 oz vegetable broth
    1 tsp cumin
    1/4 tsp cayenne pepper
    2 ea 15 oz cans of black beans
    1 cup frozen corn kernels

Directions

1) Saute the onion and garlic in the olive oil until brown.
2) Add quinoa, vegetable broth, cumin, and cayenne pepper.
3) Bring to a boil.
4) Reduce heat, cover, simmer for 20 minutes.
5) Add beans, simmer 5 more minutes.
6) Add corn. Cook until corn is warm through, about 5 minutes.
7) Serve hot.
