Ingredients

    Extra Virgin Olive Oil, 1 Tbsp
    Onions, 2 medium
    Beef, tip round, 1 1/2 lbs
    Black pepper, 1 tsp
    Carrots, chopped, 12 oz
    Red Potato, 3
    Garlic cloves, 2
    Red Wine, 1 1/2 cups
    Red Wine Vinegar, 1/3 cup
    Beef broth, 2 cups
    Thyme, dried, 1 tsp
    Tomato Paste, 1 Tbsp
    Flour, white, 1/4 cup

Tips

When adding flour, be careful not to let the flour clump.


Directions

Cook sliced onion in olive oil over medium heat, until onion becomes translucent. Season chopped beef with pepper, cook until all sides are browned. Add remaining ingredients except flour, bring to simmer, cook, covered, over low heat until meat is tender and vegetables are cooked. Whisk in flour to thicken sauce. Cook for 15 minutes longer or until thickened, covered.
