Number of Servings: 1

Ingredients

    One Large Egg + One Egg White
    3-4 Small Leaves of Fresh Spinach
    1 tbsp of Ricotta Cheese, Part Skim

    Dash of :
    Chia Seeds
    Spirulina
    Salt + Pepper

Tips

Make sure you coat the pan with olive oil spray, otherwise it will stick!

Only make one serving at a time!
If you put too many eggs in one frypan the middle will not cook enough.

If you mess up the "pancake" on the flip, just make it scrambled :)


Directions

Scramble one whole egg with one egg white.
Tear up a few small leaves of spinach and add to eggs.
Add the chia seeds, and spirulina, and a pinch of salt & pepper. Give everything a little stir.

Spray small frypan with olive oil spray and place on low to medium heat.
Pour in mixture, then place small dollops of ricotta cheese throughout.
Cook first side for about 2 minutes, flip and cook an additional 1 minute.
Flip frypan over to plate.
Salt & pepper to taste, if desired.
