Ingredients

1 1/2 cups mashed potatoes (leftover works well here)
1 Tb Extra Virgin Olive Oil
1/4 c diced onion
1/4 c diced carrot
1 Tb water
1/4 c frozen corn
1/4 tsp dried thyme
1 Tb cornmeal
1 c vegetable broth
1/4 c cooked red lentils (or canned, rinsed)
Directions
1. Position rack in upper third of over; preheat broiler. Coat 2 ramekins with cooking spray. Pplace on baking sheet.
2. Heat oil in large skillet on medium high heat. Add onion, carrot, and water. Cover and cook, stirring occasionally, until softened, 3-5 minutes.
3. Stir in corn, thyme, 1/4 tsp salt and dash of pepper. Cook, stirring occasionally, for 2 minutes.
4. Add cornmeal (thickener). Stir in broth. Bring to simmer. Cook, stirring, for one minute. Stir in lentils, and cook, stirring constantly for two minutes.
5. Divide the veg mixture into the ramekins. Top with mashed potatoes (and cheese, if you'd like). Broil, rotating halfway through until the potato is lightly browned in spots, 6-10 minutes.
Serving Size: Makes two large ramekins
