Introduction

Ingredients

    1 1/2 cups hot espresso
    1/4 cup superfine sugar
    1 lb low-fat ricotta cheese
    1/2 cup fat-free cream cheese
    2 tbsp Kahlua
    3 egg whites
    12 ladyfingers
    1 tbsp cocoa powder

Directions

In a bowl, dissolve 2 tablespoons of sugar in the coffee. Refrigerate.
In a food processor, process the ricotta, cream cheese, and Kahlua until very smooth. Set aside.
In a large bowl, beat the egg whites to soft peaks.
Gradually add the remaining sugar, beating until stiff peaks form.
Fold the cheese mixture into the egg whites.
Dip the ladyfingers in the coffee until they are soaked through.
Line the bottom of a 12-cup bowl with half the ladyfingers.
Cover with half of the cheese mixture.
Lay the remaining ladyfingers on the cheese mixture.
Top with the remaining cheese mixture.
Dust with cocoa powder.
Chill 2 hours before serving.
