Introduction

Ingredients

    1 lb chicken breast shredded
    1/4 c diced grapes, red or white
    1/4 c dried cranberries
    1/4 c natural almonds (no salt), slivered or finely chopped
    4 tbsp Light Miracle Whip
    2 tbsp dill pickle juice
    1 tbsp raw honey
    1/4 tsp salt
    1 tsp pepper
    1 tsp garlic powder
    1/4 tsp celery seed

Tips

I cook a split chicken in a crockpot on low overnight, then shred/pull the meat from each breast. I use dried cranberries that have evaporated cane juice added, not refined sugar like Craisens. Please note, I used Craisens and pickles for the nutritional information since I wasn't sure how to calculate the actual nutritional info for what I actually used.

We ate this over a bed of spinach and arugula with diced tomatoes, bell peppers, yellow squash and zucchini.


Directions

Cook chicken breast, cool, then use kitchen shears to shred into a mixing bowl. Add all other ingredients and stir until well-mixed. It will appear to be a little dry, but still taste very creamy and a little sweet.

Use for sandwiches, salads, or an appetizer with crackers.
