Ingredients

    Ingredients:
    Cucumber (with peel), 4 cucumber (8-1/4") (remove)
    Granulated Sugar, .25 cup (remove)
    *Distilled White Vinegar, 16 tbsp (remove)
    Sea Salt (365-whole foods brand) 1/4 tsp =1serving, 4 serving (remove)
    Mustard seed, yellow, 3 tbsp (remove)

Tips

Must be refrigerated but can keep in the frig for up to 6 months.


Directions

slice cucmbers (peel optional), add sugar and let sit in large bowl for about 30 minutes. This draws some of the juice out of the cucumber and makes the slices firm and crunchy. Add all other spices. Put in glass jars and set in frig. Allow 2-5 days to make friends before serving. If you like more salt or vinegar play with the ratios til you get the taste you like.
other options: add hot peppers, thinly sliced onion and tumeric. Tumeric gives a yellow color and is good for flavor and inflamation.
