Ingredients

    2 Eggs
    1 Cup Fresh Spinach
    1/2 Cup Diced Red Onion
    1/2 Cup Diced Fennel Bulb
    4 Pats of Butter
    Dash of Salt
    Dash of Black Pepper
    2 Tbsp of Olive Oil

Directions

Saute Fennel, Onion, Spinach in Olive Oil and Butter, Dash of Salt and Pepper, then add eggs. 2 Pats for Saute and then another 2 pats for the eggs, use less if you're not Southern
