Introduction

I find this a satisfying salad and I often have it for lunch. The vegetarian "chicken" can be substituted for a vegan product. I used the Veggie Patch Chick'n Nuggets in this version, but I have used the Quorn brand Chick'n nuggets as well. I find this a satisfying salad and I often have it for lunch. Ingredients

    Vegetarian "Chicken" nuggets or cutlet (6 servings)
    Apples (4 small)
    Avocados (2)
    Romaine lettuce (2 bunches)
    Balsamic Vinegar (1/4 cup)

Tips

Keep the apple/avocado/dressing mixture, the lettuce, and the chick'n pieces separate until you dish the salad, especially if you want to keep leftovers. That way the whole thing doesn't get soggy.


Directions

Wash and chop romaine lettuce.
Microwave chick'n nuggets, let cool, and chop into 1cm pieces.
Wash and dice apples.
Peel and dice avocado.
Combine apples and avocado with balsamic vinegar.

Serving Size: makes 6 servings
