Ingredients

1.5 large zucchini
1/2 box of quinoa
~3oz of feta cheese
1/2 teaspoon of olive oil for the quinoa [per box instructions]
1/2 tbs of butter [for sauteeing]
salt & pepper to taste
Tips
I chose a quinoa that was flavored so that I wouldn't have to add so much seasoning. But plain quinoa could also do the trick. If you're not a fan of feta, try other cheeses. Bon appetit!
Directions
1. Preheat oven to 350F
2. Follow directions on box to prepare quinoa. Only use half of the box [1serving] - roughly 17 minutes
3. Cut the zucchini in half, lengthwise. [I used only 1.5 zucchini, should give 6 boats]. Be sure that you removed the stems prior to.
4. Cut and scoop out the flesh, but leave about 1/2 inch of the zucchini intact. [I used a paring knife].
5. Dice up the zucchini and saute in a pan with butter'. Add your seasonings [salt and pepper].
6. Spoon the zucchini back into the boats.
7. Add the quinoa on top of the zucchini.
8. Top the boats with feta cheese.
9. Bake in the oven for about 20-25 minutes [until the feta becomes slightly browned].
Serving Size: Makes 6 servings (1 serving = 1/2 zucchini)
