Ingredients

    egg white, 1 large
    eggs, 3 large
    onions, 1 c
    green peppers, 1 c
    canadian bacon, 1 package
    tortillas, burrito size, 7 each
    cheddar cheese, 1 c shredded
    salsa, 1 c
    jalapeno peppers, 0.5 c, sliced

Directions

cook onions, peppers, and canadian bacon until vegetables are tender crisp. Put in a medium size bowl. Beat the eggs and white lightly, then scramble. Add to bowl with vegetables. Take tortilla and top with egg mixture, cheese, salsa, and jalapenos. Roll up into a burrito and wrap in aluminum foil.

Store in the freezer. To cook, place in 350 degree oven for 30-40 minutes.
