Introduction

Ingredients

4 oz. tomato paste
8 roma or plum tomatoes
1 medium-large onion, any color (I prefer white or yellow)
1 jalapeno
2 serranos
4 cloves of garlic
1/2 medium bell pepper
Juice of 1 lime
1 TBSP EVOO
cilantro
salt and pepper
Tips
*You may need to add some liquid to your blender for the right texture. I use water, but tomato juice would work too.
** Grilling the limes too helps release juices and gives it a little bit of a smoky flavor. I love it!
*** You also may want to add some chopped onion in if you blended your salsa thinner for some texture.
Directions
Core and cut your tomatoes in half; Also cut onion into chunks. Cut peppers in halves long way; if desired, get rid of the seeds in your hot peppers. The more seeds, the hotter! Arrange your veggies on layers of foil on cookie sheets and drizzle with olive oil and sprinkle with salt and pepper. Grill until veggies are tender and peppers are slightly charred. When done, add lime juice and tomato paste with your veggies to a blender and blend as smooth or chunky as desired. Once the salsa is cooled, add cilantro to taste. WAH LAH! Salsa :)
