Ingredients

    3 zucchini, about 2 cups and doent have to be exact
    1 purple onion, chopped
    1 tsp of olive oil
    1 can of chopped Italian tomatoes
    salt and pepper
    italian spice blend, (oregano, basil, bay leaf)

Directions

slice zucchini and chop onion. Heat olive oil in skillet and saute onion till soft, add zucchini and tomatoes and spices to taste. Bring to a simmer till zucchini is soft.

    It sounds yummy ~ I would add to the recipie that you do not eat the bay leaf (being a fairly simple recipie and an inexperienced cook might not know this) :) - 5/9/08
