Ingredients

1 chicken breast
1/2 cup dry lentils
1 cup water
1 cup chicken broth
1 cup PLAIN lowfat greek yogurt (I used OIKOS Organic)
1 large bell pepper
1 cup fresh spinach
1 Tbsp yellow curry powder
1 tsp lemon juice
Directions
Cook lentils and 1 cup water water over medium heat until lentils are soft (about 20 mins).
Cut the chicken breast into bite-sized chunks.
In a large skillet, cook up the chicken breast in chicken broth until mostly done (about 15 mins) over medium-high heat. Add curry powder to cooking chicken.
Slice up the bell bepper into long thin slices. Place into skillet with spinach and let cook for about 2-3 minutes. Add 1 cup yogurt to the skillet and stir in. Take cooked lentils and stir in. Add the lemon juice and stir in. Let cook together for another 2-3 minutes. Remove from heat and serve.
