    1 TBS. walnut oil
    1 clove chopped garlic
    1 chopped jalapeno pepper
    2 bay leaves, crumbled
    1 TBS. oregano
    1 tsp. turmeric
    1 TBS. garam masala
    dash salt
    dash black pepper
    2 cans organic diced tomatoes
    3 scallions, chopped
    10 fresh mushrooms, quartered


I make this with Curried Meatballs and serve over cauliflower 'rice'.


Heat oil.
Add spices and cook one minute.
Add scallions and mushrooms and saute 3-5 minutes.
Add tomatoes and cook 25-30 minutes.

Serving Size: Makes four servings.
