Introduction

Ingredients

    *organic roma tomato, 5 lbs
    Salt, 2 tbsp
    Cider Vinegar, .5 cup
    *Organic Green Bell Pepper, Raw, 2 cup
    *Onion, White Large
    Garlic, 2 clove
    *galic and herb mrs dash, 2 tbsp
    Pepper, red or cayenne, 2 tbsp
    Garlic powder, 1 tbsp

Tips

I blanch my tomatoes first but you don't have to. You don't have to use roma tomatoes but they have less seeds. If you use a more seedy tomatoe I would add another 1/2 a pound or so to equate for the loss because I didn't use the seeds. Also, the 40 servings for the tomatoes was gauged on a 2 ounce Roma tomato requiring 80 oz would mean 40 servings.


Directions

Chopped everything and put in big pot. Bring to a boil for about 3 minutes and then put on low for another 15 minutes stiring ocassionally until the green peppers slightly lose their bright green color. Cool for about 15 minutes and eat. I like to refrigerate this and eat the next day, Then I can the rest in mason jars for later use.
