Ingredients

    oat bran 1 cup
    buttermilk 1 cup
    gluten free garfava sorghum flour mix, 1 cup
    Raisins, .5 cup, packed
    Coconut, raw, .5 cup, shredded
    Carrots, raw, 1 carrot (7-1/2")
    Walnuts, 1 cup, chopped
    Egg, fresh, 1 large
    *Corn Oil, .5 cup
    Banana, fresh, .67 cup, mashed
    Vanilla Extract, 1 tbsp
    Salt, .5 tsp
    Baking Soda, 2 tsp
    Apples, fresh, 1 large (3-1/4" dia) (approx 2 per lb

Directions

soak flour and oats overnight in buttermilk. mix other dry ingredients and add in morning. Mix all other ingredients, Bake in muffin tin 18 minutes till done.

Serving Size: makes 18 muffins
