Introduction

Ingredients

1 lb. uncooked hot- sausage (I used Jimmy Dean's) also can use chorizo with the casings removed
1 large onion, chopped
2 chile peppers, finely chopped
2 jalapeno peppers, sedded and finely chopped
3 tbsp. tomato paste
3 large sweet potatoes, peeled and cut into 1/2 inch cubes
4 cans (14.5 oz each) fire- roasted diced tomatoes, undrained
2 cans (15 oz. each) black beans, rinsed and drained
2 cups beef stock
2 tbsp. chili powder
1 tbsp. dried oregano
1 tbsp. ground coriander
1 tbsp. ground cumin
1 tbsp. smoked paprika
1/4 cup lime juice
Tips
Also good to put over some homemade corn bread!
Directions
1. Brown the hot sausage, onion, chiles, and jalapenos ina skillet. Transfer mixture to large crock-pot.
2. Add tomato paste and stir throughly
3. Add stock, sweet potatoes, beans, fire- roasted tomatoes, and spices. Cook for 6-7 hours or until the potatoes are cooked through.
4. Add lime juice 20 mins before serving.
Serving Size: makes 16, 1/4 quart servings
