Ingredients

1 + 1 tsp ghee
1 cup onions
2 cups mushrooms
1/4 c dried mushrooms
Beef broth (4 cups)
150 grams pearl barley (soaked for 6 hours prior to cooking)
Beef cubes
Directions
Saute onions until soft in 1 tsp ghee.
Add cubed beef and brown.
Add beef broth and soaked barley to onions. Bring to boil and let simmer for 30 minutes.
Meanwhile, add 2 cups hot water to dried mushrooms and set aside.
In a separate pan, saute mushrooms in remaining tsp ghee.
Add mushrooms (sauteed and soaked) and mushroom water to pot and simmer for an additional 35 minutes.
Salt and pepper to taste
Serving Size: Makes four 1.5 cup servings
