Introduction

Modified version of Laura Dolson's recipe on About.comLowCarbDiets. I substituted 1/2 of the almond meal with flax meal. Modified version of Laura Dolson's recipe on About.comLowCarbDiets. I substituted 1/2 of the almond meal with flax meal.
Number of Servings: 6

Ingredients

    1/2 cup almond meal
    1/2 cup ground flax meal
    2 eggs
    1/4 cup water (for puffier pancakes, you can use sparkling water)
    1/4 teaspoon salt
    1 T sweetener (I used pure maple syrup)
    2 tsp coconut oil (for cooking)


Directions

Mix ingredients together and let rest for a few minutes. Cook as you would other pancakes. Measure 1/4 cup batter per pancake. I like to use a nonstick pan with a little oil. The only real difference is that they won't "bubble" on top the same way as regular pancakes. Flip them when the underside is brown.
