Introduction

Number of Servings: 12

Ingredients

    2 TBSP - Olive Oil
    1/2 C - onions
    1 C - Carrots, sliced
    2 - large celery sticks, sliced
    1 15 oz. can crushed tomatoes

    1 garlic clove, minced
    1 TBSP - curry powder
    1 TBSP - coriander seed (crushed)
    2 TBSP - Turmeric (ground)
    1 TBSP - Cayenne Pepper
    1/2 TBSP - Red Pepper Flakes


    8 Cups organic vegetable broth
    3 Cups water
    3 Cups Red Lentil (dried, sorted and rinsed)
    1 Tomato, big, peeled and cut into pieces
    Salt and pepper to taste, optional




Tips

If you can wait.....You can blend together all ingredients in a blender for a thicker soup. Delicious!!


Directions

Stock pot, add oil and get hot. Then add all seasonings, onion, garlic, celery, carrots. Keep stirring while you Cook 5 mins simmering. Then add can tomatoes, cook an additional 10 mins on LOW Simmer.

Add your Lentils, the big tomato that is peeled and cut up, 8 cups of vegetablae broth with 3 cups of water.

Bring to a boil then simmer WITH lid for 30 mins. Salt to taste is optional..

Serving Size: 12 - 1 cup servings
