Ingredients

    1 tbsp sunflower or other vegetable oil
    1 onion, diced
    3 cloves garlic, minced or pressed
    350g block of extra firm tofu, grated
    2 540 mL cans of beans (black beans or red kidney beans, for example)
    2 800 mL cans of diced tomatoes
    1 Jalapeno, diced fine
    3 tbsp chili powder (North American style spice mix)
    1 tbsp paprika
    1/2 tsp cayenne (or more)
    Salt, to taste

Tips

You can stretch this with some more veggies, like bell peppers, mushrooms, carrots etc. Some fresh cilantro gives it an outstanding flavour as well.


Directions

Sweat the onion and garlic in the oil over medium high heat. Add tofu, Jalapeno and spices and stir. Add diced tomatoes and beans. Cook until flavours meld, about 10 minutes. Serve with long grain brown rice.
