Ingredients

    1 or 1 small eggplants
    olive oil
    1/4 cup tahini
    1 to 2 tbsp lemon juice
    sesame seeds
    salt
    pepper

Tips

Many recipes include garlic and olive oil. Because I don't tolerate garlic very well, I've removed it from the recipe, but feel free to add as much as you'd enjoy!


Directions

Rub eggplant with a bit of olive oil. Pierce skin. Place in roasting pan lined with foil (for easy clean-up) and bake at 400 degrees for 45 minutes or until soft. Remove from oven and let sit until cool. When cooled, remove skin and collect cooked eggplant in dish. Add 1/4 cup tahini, 1 to 2 tbsp lemon juice, sesame seeds, salt and pepper to taste. Mix altogether and enjoy!
