Introduction

VEGETABLE AND SAUSAGE SOUP/STEW VEGETABLE AND SAUSAGE SOUP/STEW
Number of Servings: 21

Ingredients

    32-64 oz water depending on how thick or thin you like your broth (nutrition info is figured on 64oz)
    6 cubes chicken bouillon
    1 large yellow onion
    1 24 oz can diced tomatoes with green chiles
    2 12 or 16 oz cans cut green beans (3-4 cups depending on can size)
    2 16 oz cans red kidney beans
    1 12 or 16 oz can diced potatoes
    1 12 oz can of yellow sweet corn
    1 16 oz can of garbanzo beans
    1lb of browned ground pork sausage, mild to hot depending on your taste
    Optional : 1 bunch of cilantro and/or 2 tsp red pepper flakes.



Tips

A quick, very flavorful and filling soup/stew. Season to your own taste. It's great served with hot, crusty bread.


Directions

In a large pot set to medium heat, add the diced onion and bouillon cubes to the water. Drain all canned veggies do not drain the tomatoes and add everything to your water. Brown your sausage until well done. Drain the sausage and add to the soup mixture. Season to taste with red pepper, cilantro, black pepper and a dash of salt if needed.
