Ingredients

    Eggplant with low fat mozzarella cheese which I couldn't find so I added low fat Sargento Colby. DO NOT USE COLBY. USE LOW FAT MOZZARELLA.

Tips

For freezing prepare dish as recipe says and freeze whole or in sections. For lower calorie servings cut in half. The portions are quite large. Or serve for lunch with lovely salad.
