Ingredients

    Onions, raw, 1 medium (2-1/2" dia)
    Garlic, 2 clove
    Walnut Oil, 1 tbsp
    Parsley, 1 cup
    Spinach, fresh, 2 cup
    Pesto Sauce, 0.12 cup

Tips

This would of course also make 2 servings of about 1.5 cups each, but since I ate it all as a late afternoon snack, I counted it as 1 serving for


Directions

Slice a zucchini length wise into thin strips about the size of linguini pasta and set aside.

Chop 1 medium yellow onion and 2 cloves of garlic, then cook in 1 Tablespoon walnut oil until lightly carmelized. Then add linguini strips, and when they reach an "al dente" texture, add 1 cup parsley, 2 cups spinach, and 1/8 cup Pesto sauce, mix over medium heat until spinach is wilted

Serving Size: makes 1 serving at 3 cups
