Introduction

Easy cake that is not too bad for you! (No added butter and no white flour) Easy cake that is not too bad for you! (No added butter and no white flour)

Ingredients

    200g chopped, roasted pumpkin seeds
    200g sugar
    8 med eggs (separated)
    80g bread crumbs
    2tbls rum
    (vanilla essence)

Directions

1. Cream 2/3 of sugar with egg yolks and vanilla essence
2. Blend in pumpkin seeds and bread crumbs
3. Beat egg whites with rest of sugar
4. Combine yolks, whites and rum
5. Bake for ~40 mins at 180°C
6. Enjoy (or add whatever icing you like)
