Introduction

Ingredients

    1 lb. bag of great northern beans (16 oz)
    4 cups chicken broth
    2 cups chopped onion
    3 large garlic cloves minced
    2 tsp ground cumin
    1 1/2 tsp oregano
    1 tsp ground coriander
    1 jalapeno chopped finely
    1 banana pepper chopped finely
    2 lbs boneless turkey breast or chicken breast grilled and cubed
    1 tsp sea salt

Tips

you may have to adjust the amount of broth you put in. the original recipe called for only 4 cups and I found there was almost no broth left after the beans had simmered in the broth a couple hours! so I poured another 2-4 cups of broth in - the broth is so low calorie that it doesn't affect the calorie count dramatically. i ended up with 9 (1) cup servings.


Directions

place the beans in a soup kettle or dutch oven and add enough water to cover the beans by two inches. Bring the water to a boil, let it boil for 5 minutes, then remove from heat and set aside (covered) for an hour. drain and discard liquid.

Put the beans in a slow cooker or in a large pot. add the chicken broth, the onions and garlic, the peppers and the seasonings. cover and let it go on the low slow cooker setting for 7 hours... or let it simmer at a low boil on the stove for a couple hours til the beans are almost tender. add the meat and sea salt and simmer another hour until the beans are truly tender.

Serving Size: makes about 8 (1) cup servings
