Introduction

I make this to throw in lunches and as a side for dinners throughout the week. I mix up and than pop in the freezer in one cup containers to grab and go. Ingredients

    For lunches I usually add 2 Tbs. of Light Italian Dressing or a Light Vinagrette. I also will add a cup of some type of meat, or just more veggies depending on my nutritional needs of the day. This really does save a lot of time. When running the kids to sporting events I can grab one toss in the microwave and than take to eat along with a baggie of some type of vegetable or with some fruit. Excellent fastfood!

Tips

Let rice completely cool before adding to containters.


Directions

I use the minute rice instant rice. While it is cooking for 5 mins I chop up the green onions, rinse a can of black beans, and chop up the squash or zucchini. Once the rice is done I rinse dump into a large bowl and stir in the remaining ingredients. I stir in 2 tbsp of olive oil so the rice doesn't get sticky. I than put into freezer storage containers (1cup servings).
