Red Pepper (bell pepper)1 large, chopped
Celery, raw, 4 stalk, medium (7-1/2" - 8" long) chopped
Red Onions, raw, .5 cup, chopped
Beans, pinto, 1 can drained
Black-eyed peas 1 can drained
Beans, white, 1 can drained
*Green Giant - White Shoe Peg Corn 2 small cans
*smart balance oil, 1 cup
Cider Vinegar, .5 cup
*Splenda, 1/4 c.
jalepano (optional) 1 pepper
Tips
I always make mine 24 hours before I want to serve it, it keeps in the refrigerator for over a week and is great added to eggs for an omelet or wrap. I serve mine with Doritos scoop chips.
Directions
chop all vegetables, place in bowl. drain all cans of beans, add to chopped vegetables. Set aside
place oil, apple cider vinegar and Splenda into medium saucepan, bring to boil. When this mixture has reached the boiling point pour over vegetable and bean mixture. Place in refrigerator for minimum of eight hours.
