Introduction

You can create one loaf of banana bread or about 18 muffins. This is an outstanding recipe for over-ripe bananas when no one will eat the banana anymore. Ingredients

    1.75 C flour
    2/3C sugar
    1t baking powder
    0.5t salt
    dash baking soda (0.25t)
    1/2C butter
    1-2 mashed over-ripe bananas (see tip)
    2 eggs slightly beaten



Tips

1. The best bananas to use are so over-ripe no one will eat them. They mash easier and provide better flavor.
2. The original recipe called for 1 cup of mashed bananas, but we found that you can use either 1 or 2 bananas depending on how much flavor you want, or how many bananas you have that no one will eat. We have not tried more than 2 bananas per recipe.
3. Muffins take ~20 minutes to cook so pay closer attention. We use stoneware to cook, which take a little longer to cook in than metal.
4. I don't like walnuts or pecans, but you can probably add nuts if you prefer


Directions

-Preheat oven to 350 degrees
-grease and flour 9"x5" loaf pan or muffin pan. Alternatively, muffin/cupcake cups ease cleaning
-In a large bowl, fork mix flour, sugar, baking powder, salt and soda
-cut in butter until mixture resembles coarse crumbs
-with fork, mix in banana(s) and eggs until blended
-spread batter evenly in pan
-Cook 45-55 minutes in loaf pan, or until toothpick comes out clean
-If using muffin tin, cooking time will be 17-25 minutes. Cook until toothpick comes out clean and tops are slightly browned


Serving Size: makes 1 loaf; 12 large muffins; 18 medium muffins or 36 mini-muffins
