Ingredients

    2 cups shredded cabbage
    1 cup shredded carrots
    1/2 cup light mayonnaise
    2 T vinegar
    4 packets Splenda
    1/2 t grated lemon zest
    salt and pepper to taste

    Mix mayonnaise, vinegar, Splenda, and lemon zest . Pour over cabbage and carrots and mix well. Add salt and pepper to taste.
    Chill at least one hour for flavors to blend.

Tips

I use my food processor to shred the cabbage and carrots.
