Ingredients

    1.5 cups of Minute Rice
    1 pound of bacon cooked
    .75 cup of green peppers
    .25 cup of onion
    2 cups of tomato juice
    salt,pepper, to taste

Directions

Cut up bacon in to small pieces and cook with peppers and onions. Make minute rice per box instructions. When bacon is done combine it and the peppers and onions with the rice. Add about 2 cups of tomato juice and season to taste. You can add more or less tomato juice depending on if you want it soupy or thick. Add chili powder or red cracked pepper for a little more zip. Let everything simmer together for about 15 minutes. There are lots of ways to make substitution in this receipe. Brown rice works well and low sodium tomato juice will help cut down on the sodium. This makes 8 - 1cup servings
