Ingredients

For the Marinade:
1.25 C Fresh Lime Juice
2 Tsp Olive Oil
0.5 Tsp Chili Powder
0.5 Tsp Ground Cumin
For the Fajitas:
4 skinless, boneless chicken breast halves (about 4 oz each)
2 Medium Red Bell Peppers, cut into wide strips (about 2 cups)
1 Large Onion, cut into strips (about 1.5 C)
2 Medium Tomatoes, chopped (About 2 C), divided
0.5 Tbsp chopped fresh cilantro, divided
8 whole wheat flour tortillas
Directions
1. To prepare marinade, in a medium bowl, combine lime juice, oil, chili powder and cumin. Mix well. Place chicken in a shallow glass dish. Pour marinade over chicken, turning to coat. Cover with plastic wrap and refrigerate for 30 minutes.
2. Preheat the broiler or grill. Place chicken on broiler plate (Reserve marinade).
3. Grill or broil chicken 3 inches from heat. 5 minutes through, pour marinade over chicken. Turn chicken and cook for 5 more minutes. Place chicken on a plate; cover with foil to keep warm.
4. Grill bell pepper and onions in a broiler pan (if grilling wrap in aluminum foil and grill with chicken). Broil until vegetables are lightly charred, turning once, about 8 minutes.
Slice chicken into strips. Slice vegetables and mix, covering with Cilantro. (I keep mine seperate and do not use the cilantro). Low fat sour cream not included in dietary information.
