Ingredients

    4 boneless, skinless chicken breasts
    1 tsp dried oregano
    1/2 tsp salt
    1/2 tsp garlic powder
    1/4 tsp pepper
    1/4 tsp cayenne
    1 medium onion thinly sliced
    1 cup sliced mushrooms (4 oz)
    1/2 cup shredded mozzarella cheese
    1/2 cup shredded cheddar cheese

Directions

1. Spray pan with nonstick spray; heat over medium heat. Sprinkle both sides of chicken with oregano, salt, garlic powder, pepper and cayenne. Cook in skillet 8 to 10 min, turning once, until juice is no longer pink when centers of thickest pieces are cut. remove chicken from skillet.
2. spray skillet again with cooking spray add onions and mushrooms saute about 5 min stirring occasionally, until tender.
3. Place chicken in skillet and spoon vegetables over chicken. sprinkle cheeses over chicken and veggies remove from heat. Cover and let stand until cheese is melted.

    I actually pounded three chicken breasts and extended the servings to 8. Left out the salt and the second pan spraying to reduce sodium and calories. Deglazed the pan with white wine added a little low sodium chicken stock and cooked the veggies in that. Very good with nice eye appeal. - 9/29/10

    I tried this chicken tonight I did not have mushrooms so I used a small zuchinni and green onions, had to go with what I had, I also used tomatoes , My husband said it was the best. He does not like white meat because it is dry. so that was a plus. Thanks I will make it again - 1/25/10

    This is a very tasty and simple meal, but next time I'll sprinkle the cayenne pepper on separately. It seemed to have seasoned some chicken more than the others when mixing all the seasonings together. Overall, I plan on making this many more times in the future! Thank you. - 5/4/12

    THE BEST EVER. It's basically Alice Spring Chicken from Outback minus the bacon. I used fat free honey mustard as a dipping sauce but be careful because that has a lot of carbs. This will become a family regular so excellent! And a one pan meal! - 6/8/11
