Introduction

Most Caesars contain anchovy paste, not to mention a ton of fat and calories. I've eliminated the croutons since I hate them (with a passion), and cut the serving size down since I'm a major volume-eater. Enjoy! Ingredients

    5 oz light silken tofu (Mori-Nu, etc)
    1/4 tsp. maple syrup (optional)
    2 Tbs. Nutritional Yeast
    1 Tbs. fresh lemon juice
    1/2 tsp lemon zest
    1 Tbs. apple cider vinegar
    1 tbsp. Dijon mustard
    3 cloves garlic, minced
    1 tsp. coarse-ground black pepper
    1 large head romaine lettuce, washed, dried and chopped

Directions

Place tofu, syrup, nutritional yeast, lemon juice, lemon zest, vinegar, mustard, and garlic in blender or food processor, and process. Season generously with pepper.
To assemble salad, place lettuce in salad bowl, and pour dressing overtop. Toss well to coat leaves evenly.
